Favilla
In Asolo, a restaurant and bistro that pays homage to Venetian tradition and its rituals.

In Asolo's main square, the informal and vibrant Favilla restaurant and bistro combines Venetian gastronomic tradition with cutting-edge culinary innovation, under the guidance of the brilliant chef Claudio Gazzola.
Opened in July 2023, creative, relaxed, and fun, Favilla is a guarantee of quality and excellent cuisine, thanks to the guidance of chef Claudio Gazzola and maître d’ and sommelier Giada Bergamin, founders of the nearby Osteria alla Chiesa in Monfumo.
Interpreting Favilla as the fine dining bistro of Osteria alla Chiesa, Claudio here combines the knowledge he’s gained in the kitchen and his travels around the world with his roots: the Venetian culinary tradition and its products, which he loves to source from local suppliers. He is joined on this adventure by chef Edoardo Scalco, with whom he has previously collaborated.
With Favilla we wanted to create continuity with the Osteria alla Chiesa, offering the same quality and valorization of the territory albeit in a more informal context and linked to typical Venetian recipes.
(Giada and Claudio)
Favilla is located in the main square of Asolo, one of Italy’s most beautiful medieval towns, in a location that has hosted many historic establishments in the past. It pays homage to these with decor inspired by the international bistros of the 1960s—in fact, the beautiful bar was designed by the same artisan as Harry’s Bar in Venice—and artworks on the walls, with constantly evolving temporary exhibitions organized by the nearby Itaca Gallery.
Favilla offers traditional Venetian recipes based on high-quality ingredients carefully selected by Claudio, such as meat from the Cirotto butcher in Riese Pio X, which respects animal welfare throughout its life cycle, vegetables and flour from organic farms, and, of course, fruit and vegetables grown in his father Dino’s garden.
The menu is varied and delicious: from appetizers like beef tartare and asparagus mousse, white and green asparagus and buckwheat crumble, to pasta dishes like bigoli with duck ragù and gnocchi stuffed with Morlacco cheese, peas, bacon, and mushrooms, to Vicenza-style cod with Storo corn polenta and Venetian-style veal liver cooked our way with Biancoperla corn polenta.
And there’s always a choice of smarter dishes, like the Favilla Burger and Padellino pizzas, as well as vegetarian and vegan options.
Claudio and Giada, the protagonists of Asolo’s main square, also love celebrating its most beloved rituals, such as takeaway sandwiches, a custom born to delight the many cyclists who visit the town.
So, on Saturday and Sunday lunchtime, they set up a station on the restaurant’s outdoor terrace serving sandwiches made with their own leavened products, from sourdough bread to focaccia, filled with grilled Trentino ham and fresh seasonal ingredients, also with vegetarian and vegan options.
Especially on weekends, Favilla’s outdoor terrace overlooking Asolo’s main square comes alive with social gatherings and aperitifs, such as Giada’s famous Americano cocktail specialty, while the restaurant’s two indoor dining rooms host special dinners and gourmet experiences.
Favilla boasts the allure of cool international bistros, welcoming guests from morning to night with the smiles of Giada and Giulia Orsato, and the bonus of Chef Claudio’s cuisine and his team, one of the Veneto’s greatest culinary talents.
The Secret
The name Favilla was suggested by a colleague of Claudio and Giada and was chosen because it evokes embers, fire, and sparks, as the couple made the decision to take over the restaurant in just a few days.
