In Valdobbiadene, with the most spectacular view of the Cartizze hills, the refined restaurant is the kingdom of the gourmand chef Chiara Barisan who creates dishes that embrace in taste and colors this unique territory recognized as a UNESCO World Heritage Site.

The stunning view of one of the most evocative panoramas of the famous Cartizze Hills, the “grand cru” of Prosecco, would be enough to make the Salìs restaurant very special, yet it will be the touch of its chef and muse, Chiara Barisan, that will make it one of your favorite places.

Since 2013, she has been the beautiful soul of the restaurant, since when, at a very young age, after various experiences in fine dining restaurants, she decided to take over the management of this evocative ancient building, once used as a stable for the nearby farm where the fields and vines were cultivated.

Just as you savor a territory, the cuisine must also excite through the 5 senses.

Salìs is the dialect name given by farmers to the special composition of the soil in the area, originating from ancient marine uplifts and therefore rich in those precious minerals that give Cartizze wine a unique flavor.

In her gastronomic project, Chiara has enclosed a lot of passion for cooking and for the territory, proposing traditional dishes revisited with creative accents and great attention to raw materials and seasonality.

In fact, she has created a “home garden”, with the collaboration of her brothers, which sees the creation of a cultivation space dedicated exclusively to the restaurant, in which all those seasonal vegetables, edible flowers and wild herbs used in her recipes find a home.

On the menu we find many delicious dishes, from Fried egg with cream of onion and snow peas, and apple vinegar gel among the appetizers, to Ravioli del plin filled with hare, with double cream and rosemary oil, up to the meat and fish second courses such as Boneless rabbit leg stuffed with chanterelles with potato cream and Cod tripe with cherry tomato sauce, bay leaves, lemon and shallots.

The selection of wines is extensive, all personally chosen and tested by Chiara, with a lot of space given to the local winemaking tradition, as well as wine realities from all over Italy, finally ranging outside the peninsula.

The mise en place in shades of white is very well-finished with elegant country-chic details that decorate the terrace, such as garlands of dried flowers, intertwined hearts and large glass demijohns that light up in the evening.

In the summer it is magical to have lunch at the outdoor tables set on the terrace, while in the winter or in the warmer months you can opt for the elegant room characterized by enormous sliding windows that open onto a postcard view when needed.

Salìs is part of a larger project that refers to the nearby Agriturismo Due Carpini, located a few steps away, with rooms created in the old house of the farmers of the farm and a wonderful panoramic swimming pool.

Salìs was built with the typical stones of the area, composed of Salìs material, including in particular the large gray stones set on its facade.
