Osteria di Collalbrigo (TV)
In a tiny village in the hills of Conegliano, the Osteria is the result of the magical union between the Ghetti family's love for their land and the return home of Luca, a chef with experience in haute cuisine gained in 3 continents.
It is with these romantic premises that in 2019 Osteria “Dalla Giovanna”, which has always been the reference point of the tiny village of Collalbrigo, made up of a few houses and a small church enclosed in a breathtaking view, could see a fresh new life.
It was 2018 when, after years of closure, the Ghetti family decided to restore the historic tavern of their own in order to contribute to the relaunch of the area and, as often happens for businesses driven by good intentions, fate runs to their aid.
In this place I have condensed all my experiences, from those i enjoyed here, in my homeland, to those made around the world, in order to create a “home” that was welcoming at all hours of the day.
(Luca Dal Col, chef)
Luca Dal Col, originally from Parè in the province of Conegliano, after having traveled half the world working in the haute cuisine sector between America and Qatar, returns from France for a wedding organized in the Church of San Dionigi, located right in front of the tavern, and there, by chance, he meets Renata Ghetti who tells him her dream.
On 5 October 2019, after a year of conservative restoration, it is Luca, the new manager, who inaugurates the Osteria di Collalbrigo, the perfect host who has been able to perfectly combine Venetian tradition with the allure of French bistros. An oasis of good food and conviviality which, keeping faith with the spirit of the taverns of the past, is open at all hours of the day, modulating its food and wine offer to the needs of customers. So, whether it’s a coffee and a bottle of water handed over on the fly to the many cyclists who frequent the area, up to a gourmet dinner with a view, you really feel at home here at any time of the day.
The restoration has not betrayed the convivial origins of the old tavern: instead of the bowling alleys today there is the beautiful panoramic terrace (with bar, heated in winter), the larìn (fireplace) and the counter, the heart of the old tavern, are the original ones, and also the new furniture, from the chairs to the tables, are inspired by the traditional village bars.
The cuisine is a compendium of the experience that Luca has gained over many years around the world, without however forgetting the roots of his beloved hills. So on the menu, alongside the traditional cicchetti (traditional finger food appetizers), there is an international proposal such as the Scottona fillet with Barolo wine reduction, foie gras, potatoes with bacon and porcini mushrooms or the royal scampi with bean cream, colonnata lard, crunchy salad and ketchup of shellfish. Luca changes his recipes every week, based on the seasonality of the raw material, preferring local products, such as the artisan cured meats from the Emporio delle Carni from Guia.
Even the wine list, with over 150 references, reflects Luca’s cultural melting pot, including the best wines of the area as well as labels from the main wine regions such as Tuscany, Burgundy and Lower Austria. Also open for after dinner, the Osteria offers an excellent selection of whiskey, rum, spirits and cocktails.
The Secret
Luca met his wife in Paris: a fine pastry chef, she is the one who signs the delicious desserts of Osteria tavern where you can taste the legendary Macarons artfully made together with a good glass of Venetian bubbles!
