Set on an estate of over a thousand hectares between the Piave River and the Prealps, surrounded by vineyards and chestnut and olive groves, Cantina Borgoluce Winery excels in eco-sustainability and landscape conservation.

Borgoluce is a world of beauty and harmony with nature. In addition to the farm, it comprises the Foresteria, an agritourism guesthouse with a pool, the Osteria, a hillside restaurant, La Frasca agri-bistro, and, most recently, the Cantina, the winery, wine bar and bistro where you can taste the excellent Borgoluce wines accompanied by delicious snacks and dishes made with the estate’s locally sourced produce.

Owned by the noble Collalto family, who settled in these areas in the 12th and 13th centuries, founding the Collalto and San Salvatore castles, the estate produces wine, cheeses, cured meats, honey, fine flours and breads, walnuts, chestnuts, and pomegranates, as well as many other specialties available for purchase in the adjacent shop.

The winery’s architectural design, designed by engineer Filippo Giustiniani, is highly innovative, with a large reception area nestled in the surrounding countryside and an underground production area dug 13 meters below ground to preserve the harmony of the landscape. This design also focuses on sustainability, leveraging the soil’s thermal insulation properties to maintain the pressure tanks, tanks, and warehouse. Natural wood, iron, glass, and stone are the key elements in the spaces reserved for visitors and events, while the winery’s exterior, painted with natural plaster in shades of ochre and dark red, echoes the colors of the Collalto counts’ rural homes.

The highlight is undoubtedly the panoramic tasting room on the ground floor, from which you can enjoy the skyline drawn by the hills and the two castles of Collalto and San Salvatore, symbols of the history of these territories. The incredible view continues under the large portico, a tribute to rural Venetian architecture, opening onto the surrounding countryside and a spectacle of colors that change with the seasons. Upstairs are the conference room, an industrial-style open kitchen, and a large tasting area adorned with a bookcase filled with antique volumes from the family collection, books on the local area, and old archives where history has stood still.

Cantina Borgoluce offers a seasonal menu of traditional meals and platters of cured meats and cheeses to accompany wine tastings, all made with the farm’s own products.

Among the offerings are buffalo roast beef with ricotta flakes and celeriac purée with soft egg on Mandre fondue and porcini mushroom cubes, focaccia bread with mozzarella, pancetta, and fried sage, classic bread and soppressa, or the delicious “mozza” in carrozza. And for those craving something sweet, there’s no shortage of options, from chestnut and persimmon purée to shortcrust pastry with buffalo panna cotta.

Upon request, wine tastings include visits to the Glera vineyards and tours to discover Prosecco and its different production methods, Charmat and Martinotti.

The Secret

Nearly half of the property is forested, preserving its original appearance. All the branches and foliage produced during maintenance are recycled to fuel the woodchip boiler that heats the cellar. The same materials left over from the extensive excavation required to build the underground production area were reused to build roads and other infrastructure.
