The super-fresh fish is personally chosen by Renzo at the local fish markets in order to give his customers the best quality raw materials. The déhor, now just fabulous for a dinner under the fifty-year-old vine, was born almost by chance from the natural evolution of the plant, originally used as a shelter for the bikes of local customers who stopped at the bacaro to drink “the last goto” (the last drink) before returning at home.
