Ristorante Oseleta (VR)
The Oseleta Restaurant, a solid Michelin star since 2013, is located inside the 5-star luxury Relais & Châteaux Villa Cordevigo Wine Relais, in the heart of Bardolino, the wine-growing area of Lake Garda, famous for being called "the Venetian Mediterranean paradise".
Its typical decor of the Venetian patrician villas marries, in fact, with the charm of the chicest Riviere characterized by a landscape softened by lemon groves and vineyards, the red and yellow colors of the buildings, iron-glass verandas of a refined cerulean green, and Moorish Venetian style lanterns.
The restaurant is located in a side wing of the eighteenth-century building in the heart of Villa Cordevigo Wine Relais, whose origins date back to Roman times, and overlooks the bucolic landscape of the vineyards that surround the magnificent estate. The villa, since the early 2000s, has in fact been owned by the Delibori and Cristoforetti families, former owners of the Villabella farm of over 250 hectares that surrounds the relais.
There are special places where water and air have beneficial properties, places where the energy of the trees meets with the soul of men, where you eat good food and fine wine is produced. Places for lovers of beauty and the richness of history and culture.
(Cristoforetti and Delibori Families)
It is the enhancement of the ancient agricultural culture of classic Bardolino that inspires the philosophy of the Oseleta Restaurant, combined with the “emotions” that chef Marco Marras, at the helm of the young kitchen brigade since 2020, has brought with him from his international experiences.
Originally from Bosa, Sardinia, before becoming executive chef of Oseleta, he worked in important restaurants in Geneva, Miami, Hawaii from which he drew fusion inspirations for his dishes, grafting them on his great love: the products of the earth, the fresh ones and genuine with a generous and straightforward flavor. A “sustainable” passion strongly shared by the owners, and in particular by Lorenza Delibori, Maître de Maison, which led to the use of locally sourced ingredients for more than half of the restaurant’s requirements and to the creation of a magnificent vegetable garden devoted to the cultivation of typical products of Sardinia and Veneto in the name of tradition and biodiversity.
It is a visit to the vegetable garden that really makes us understand the vocation for excellence of the Oseleta Restaurant: ethics and aesthetics; the plants arranged in perfect symmetrical rows, as beautiful as in an 18th-century style Italian garden, cultivated according to natural methods by expert hands, just as it used to be.
Choose the tasting menu and let yourself be enchanted by the signature of chef Marras: from scallop, roasted leek, Jerusalem artichoke and veal jus to the raviolo stuffed with guinea fowl, cream with Monte Veronese cheese, and reduction of balsamic vinegar up to, among the main courses, mullet, cream of lettuce, sea urchin, and pink grapefruit. The perfect synthesis between Hawaiian exoticism and strong Mediterranean flavors is his now famous Honey marinated scampi, passion fruit, almond granita and elderberry jelly, a real delight combined with the Soave Classico Villabella.
Wine Relais with “an extra gear”, the sommelier Dario Cozzolino will be able to recommend the perfect combinations among the more than 600 labels of the cellar, as well as the excellent wines of the Villabella Vineyards which include all the great local classics such as Bardolino, Lugana, Custoza, Soave, Valpolicella, Ripasso and Amarone and, last but not least, great white and red IGT wines from native grapes of the province of Verona.
For a truly unforgettable evening, start with an aperitif at the Relais’s retro-style American Bar or, if the season permits, on the Baroque terrace that runs along the romantic secular park of the Villa and continue by booking one of the central tables on the Oseleta veranda. After dinner, the moon will take care of it reflecting on the swimming pool overlooking the vineyards.
The Secret
The Oseleta Restaurant is located inside the Villa Cordevigo Estate, a viticultural oasis with partial organic management that represents the culmination of the project pursued by the Cristoforetti and Delibori families since 1998: the enhancement of the territory starting from the concept of sustainability, respecting the environment and the people with whom the space is shared.
