Inside the orangery of the 15th-century Palazzo Venart, Glam is the only two-Michelin-star restaurant in Venice and one of the most engaging gastronomic experiences in Italy thanks to the vision of chef Enrico Bartolini and the talent of resident chef Donato Ascani.

Once you have crossed the suggestive entrance of Palazzo Venart, one of the most romantic 5-star hotels in Venice, Glam welcomes its guests in the elegant glass room that once housed the orangery of the ancient residence, overlooking a wonderful internal courtyard in the shade of a century-old magnolia.

Its culinary excellence is confirmed by a significant record: Glam is the only starred restaurant in Venice that has never changed the head chef, collecting, since its opening in 2016, a crescendo of awards, recognitions and demonstrations of appreciation from its customers.

A magic born from the partnership between the multi-starred chef and entrepreneur Enrico Bartolini and the resident chef Donato Ascani, originally from Fiuggi but now Venetian by adoption, who loves to play with the traditional flavors of the Lagoon in a contemporary way, placing the emphasis on the quality of seasonal raw materials of which he is a passionate connoisseur.

Continuous research, experimentation and valorization of local ingredients give life to an “instinctive” and original menu, a synthesis of aromas that celebrate the territory and touches of the East. Two tasting itineraries to choose from: “Art, gardens and lagoon” and “The Classics of Glam”, from which emerge signature dishes rich in heart, technique and genius.

The vegetable ingredients that inspire the Chef for his “Venetian” dishes come from the gardens of the Venice islands, while the fish, as well as other specialties, are purchased at the nearby Rialto Market, where Ascani loves to go every morning for the “inspirations” of the day.

An example of this philosophy can already be found in the entrées, including Play of Tastes and Textures, which in turn consists of various courses, including the delicious Cuttlefish, caviar and castraure (baby artichokes) and the Sant’Erasmo vegetable soup and ras el hanout; which complement each other to the sight, palate and smell, bringing to the table a distillate of Venice and the richness of its Lagoon and its gardens.

Another marvel, and historic signature dish of Ascani, is the the Acquadelle in salse, a palette in which the acquadelle, a small fish typical of the Adriatic, are fried and each completed with a different sauce and herbs from the Lagoon. Each bite is an explosion of taste and beauty. And the list of Ascani’s wonders and flavors, especially the vegetable ones, could really continue forever.

Making the dining room experience memorable is the maître and sommelier Ottavio Venditto who, in an extraordinary storytelling of territories, near and far, pairs each dish with exceptional wines, from Ua d’Oro made with Dorona, an ancient vine grown during the period of the Serenissima and today expertly recovered, to the Chambolle-Musigny Premier Cru “Le Cras” 2021 Georges Roumier.

Glam’s interior has recently been renovated, where the protagonist is the wallpaper “The Spice Route” by Misha that tells the story of the precious spices trades from the East, combined with elegant Baxter chairs and centerpieces inspired by the little animals that populate the lagoon, created in glass by master glassmaker Massimo Lunardon, a perfect pairing with the illustrations of the menu created for Glam by the artist Luigi Divari.

When it comes to Glam the superlatives are obligatory.

The Secret

Glam also has a great positive energy flowing. One of the reasons that pushed the Thai property to purchase Palazzo Venart, which was then furnished as much as possible according to the rules of the Feng Shui art.
