In Venice, inside Palazzo Franchetti, with a wonderful garden overlooking the Grand Canal, comes to life the new restaurant of chef Davide Bisetto and pastry chef Tim Ricci who here have decided to entertain, and be entertained, with the great classics of the Venetian tradition performed with delicious mastery.
Davide Bisetto and Tim Ricci – a duo that certainly needs no introduction thanks to their starred past both in Italy and in France – in their new restaurant in Venice have decided to put tradition on the table in the name of conviviality, respectively executive chef and general manager of the important project.
The setting is very charming and of great historical significance: Palazzo Franchetti, nestled between the Grand Canal, the Accademia Bridge, and a wonderful garden accessed by an Art Nouveau gate, one of the most evocative views of Venice.


We wanted to create a cuisine that tells the story of the heart of Venice, where we are, with the depth, seriousness and romanticism of the good food of the past.

The new Moro Restaurant, one of the most anticipated openings of 2025, offers a cuisine inspired by Venetian tradition, with some historical French incursions, a passion of Chef Bisetto, which expresses the foundations of good food of the past, also in service and presentation, albeit elevated by contemporary technique.
Proposals designed to be shared that are served at the table with the dishes of “great occasions”, such as the copper pots made specifically for Moro Restaurant by a craftsman from Vicenza.
The beautiful interior room also showcases Venetian craftsmanship, in an ensemble of warm colors, ranging from gold to Terra di Siena, like the wonderful Rubelli fabrics of the sofas and the lamps created in Murano by Silvia Finiels with recycled glass.
The search for the team took months as Bisetto and Ricci looked for professionals in the sector who would fully embrace their project and who, far from being a job, would interpret it as a lifestyle to share with their guests.
Thus, the Restaurant Management was entrusted to Roberto Stefani, supported by the Maître Carlo Rizzotto and the Sommelier Giuseppe Negrini, skilled in pampering guests with a 5-star service and the warmth of Sundays spent with the family.
Metaphor of this philosophy, the menu is in English, Italian and…Venetian dialect. Thus the “Ghe gera ‘na volta” path is composed of dishes with “familiar” flavors: such as the Peoci a la Marinara co a pana e Pomodoro and the Carciofini dorai, among the appetizers, and the Bigoi, Rici de mar, Calamareti e pan de Aciughe and the Gnocheti fumegai, Red shrimp, xenzero e basiico, among the first courses.
But also the classics of the delicious cuisine of the great occasions such as, continuing in Italian, the Royal Plateau of raw fish with oysters, shrimp, scampi, scallops and the kings of sea fish such as the Branzino alla Buranella or the Turbot in rombiera.
Also refined and elegant is the wine list that expresses the best of the territory with international incursions, mainly French.
And, to finish off in style, Tim Ricci tempts us with his extraordinary desserts, drawing in this case too from Italian and transalpine traditions, with sweets ranging from tiramisu to tarte citron.
The Moro Venezia project – whose name pays homage to the history of the city – in addition to Moro Restaurant, also includes, located in the adjacent garden overlooking Campo Santo Stefano, Moro Cafè, a bar and bistro open all day, from breakfast to after dinner, with a more informal proposal.
Moro Restaurant opens only in the evening, while at lunch, in its internal room and on the terrace overlooking the Grand Canal, the bistro menu is served, based on unique international dishes, pastas, salads and leavened products.
A truly unique proposal in Venice where the guest will be eager to return, to taste his favorite dish and always feel welcomed with a smile like a long-time friend.
The Secret
Built in the second half of the 15th century, Palazzo Franchetti owes its current appearance to Baron Raimondo Franchetti, from whom it takes its name, who together with his wife Sarah Luisa de Rothschild restored it at the end of the 19th century, making it perhaps finest example of neo-Gothic style in Venice, with the famous monumental staircase created by Camillo Boito.
