Ca’ Apollonio was born from a promise of love for their land and an ethical vision that builds for eternity. It was in 2015 that Maria Pia Viaro and Massimo Vallotto purchased Villa Apollonio and, two years later, the nearby Ca’ da Roman, dating back to the 16th and 15th centuries respectively.

This was where they established the farm and, in 2022, after six years of restoration, Ca’ Apollonio Heritage, the first 5-star luxury hotel in Vicenza and its province and one of the most beautiful nature hotels in Italy.

Maria Pia and Massimo’s visionary dream, amidst resilient vines and artistic alchemy

Architect Massimo Vallotto oversaw the restoration, curating every inch of the residence with incredible meticulousness, combining sustainability and designer collections, design and agronomic vision. He is passionate about the philosophy of PIWI (resistant vines), capable of producing excellent wines while almost completely eliminating the use of chemicals.

Maria Pia, a partner at Vimar who oversaw the hotel’s home automation project, took care of the warm soul of these typical Venetian residences. Together, they transformed Ca’ Apollonio into one of the very few historic structures in Italy with CasaClima A certification, boasting total circular sustainability.

The 10 suites: the only true luxury is time and nature

The restoration brought to light the original 16th-century lines, which today coexist with the most modern green building technologies. The historic building houses a penthouse, three suites, a junior suite, and two superior rooms, while the contemporary building, which also houses the spa and pool, features three additional suites with splendid terraces.

All materials are locally sourced, crafted by local artisans—from Zovonite trachyte to reclaimed oak—while the plasterwork is made of healthy raw clay. The building’s ancient soul interacts with Italian designer furniture and numerous works of art, many of which are site-specific.

Fine Gastronomy: Three Souls, One Sustainable Heart

The heart of Ca’ Apollonio Heritage is its agricultural soul, Ca’ da Roman, located just a few hundred meters from the hotel. Maria Pia and Massimo have chosen PIWI (from the German Pilzwiderstandsfähige) grape varieties, born from natural crosses that resist fungal diseases.

This is also where the estate’s organic garden is located, supplying the hotel’s two restaurants, the Gourmet and the Bistrot, both helmed by Michelin-starred executive chef Alessio Longhini, a tribute to the seasonality and biodiversity of the region.

Alessio’s talent attracts a loyal clientele for both of them, who would follow him almost anywhere for his skill: to the Gourmet for signature fine dining and to the Bistrot for local delicacies.

The Spa and Biolake: a sanctuary of water and stone at the foot of Mount Grappa

The regenerative journey at Ca’ Apollonio Heritage culminates in the Spa, a space conceived as an extension of the hilly landscape (and how wonderful it is, swimming in the pool, to admire the many paragliders launching from Mount Grappa).

The heart of the spa is the heated pool, a blade of crystal-clear water that seems to merge directly with the rows of PIWI vineyards, where the boundary between inside and outside blurs thanks to the large windows that flood the space with natural light.

The experience continues with the hot tubs, Finnish sauna, and Turkish bath, the ice fountain and sensory showers, the gym with Technogym equipment, and treatment areas, including two-bed treatment rooms for couples, offering beauty rituals and massages using local botanical extracts and precious derivatives of the estate’s vines.

In the park facing the pool, you’ll find a beautiful swimming bio-lake with a gazebo, solarium, and lounge area for a charming aperitif.

Breakfast, served in the Bistrot, is a true indulgence, both because it’s orchestrated by Chef Longhini and because it’s made special by many details, such as the Briefing, a press review provided to each guest.

Ca’ Apollonio Heritage is a truly unique place, perhaps one of the few in the world where sustainability and beauty both reach the pinnacle of authentic excellence.

The Secret

While removing the layers of modern plaster, restorers found fragments of original Venetian marmorino. Rather than covering everything with new paint, they made an extreme philological choice. The marble dust used for the restoration was mixed with slaked lime for years, following the recipes codified by Renaissance architect Andrea Palladio.
