The Hotel Villa Cipriani, which houses the Bistrot Rosmarino, is undoubtedly one of the most prestigious and evocative locations in the Veneto region. An ancient noble country residence, the five-star structure is a timeless oasis of peace, immersed in the scents and colors of the ” town of a hundred horizons” as the poet Giosuè Carducci nicknamed Asolo.
The residence, built in the Palladian era, underwent numerous interventions during the 18th century. Purchased in 1889 by the English poet Robert Browning, it takes on the charm of Tuscan homes, by virtue of the writer’s passion for the Florentine countryside. After several changes of ownership, in 1962 it became the property of Mr. Guinness, alias Lord Iveagh Rupert Edward Cecil Lee Guinness, the famous Irish King of beer, who then decided to entrust its management to Giuseppe Cipriani, founder of Harry’s Bar in Venice, who gave it its name and part of its current charm.

In an atmosphere that immediately wins you over with a welcome designed down to the smallest detail to pamper guests, the Bistrot Rosmarino is located in an old wooden building, a former orangery, on a romantic terrace overlooking the panoramic swimming pool, winner of the Italian Pool Award in 2014, and the Asolo hills.
The cuisine of Bistrot Rosmarino offers fresh and light dishes, suitable for the summer location, such as the Nicoise or octopus salad, couscous with cuttlefish slices, and veal with tuna sauce, as well as hot dishes such as spaghetti with Vesuvius piennolo tomatoes, the “400° pizza”, as well as club sandwiches, toasts and special piadinas. The attention to raw materials is maximum, and practically everything is made in the kitchens of the Villa, from the baked goods to certain types of pasta.
The drinks menu offers cocktails such as Bellini, invented by Giuseppe Cipriani, Hugo, a fragrant light drink with lemon balm and mint suitable for all hours, and the signature drink Eleonora Duse with cointreau, gin and crème de violette. The aperitifs are accompanied by a selection of finger food such as the “pierini”, delicious triangular-shaped mini-toasts, another original recipe by Cipriani.
The Bistrot Rosmarino is perfect for immersing yourself in the luxury of absolute quiet, where all the senses are naturally stimulated by a magnificent garden that embellishes every corner, offering chromatic and olfactory surprises.
Thanks to the care of the historic gardener of Villa Cipriani, here every season offers the best of itself: from the blooming of roses to tulips, to the unforgettable citrus fragrance of olea fragrans.
The Bistrot Rosmarino is open from May to the end of September (till 19 or later for private dinners and parties), also to an external public with respect to the guests of the Villa, while the swimming pool is accessible only upon reservation of a support room for the day.
The Secret
The tables and chairs of the Bistrot Rosmarino in wrought iron are the same ones that embellished the garden of Villa Cipriani in the 1950s. Expertly restored, they have come back to life becoming the protagonists of the terrace furniture and creating an elegant mix between romantic vintage and the modern and clean lines of the wood and stone structure.
