Ristorante Barberia (TV) — Veneto Secrets

In Treviso, Palazzina Barberia hosts 5 floors dedicated to the art of cooking and, in particular, to Tiramisù, the city's dessert, as well as Barberia restaurant, a charming location decorated with 15th century frescoes where you can taste recipes created to enhance the best local food and wine products.

To fall in love with Barberia restaurant it would be enough to say that it is part of the larger Treviso Tiramisù project, a company founded out of love for her city by the entrepreneur Elisa Menuzzo who wanted to dedicate an entire building to the most loved dessert in the world which, in its most popular guise and recipe current, it was born in Treviso.

Inspired by “gastronomic patronage”, Elisa wanted to create a real world around this dessert and its history which includes, in addition to a café, a deli and a pastry shop, also a cooking school, Barberia restaurant and Attico Barberia, an immersive room perfect for private dinners and events.

Preserving the roots, rediscovering lost flavors and enhancing recipes handed down through generations, giving life to emotions that will remain imprinted in the hearts and memories of guests: this is my dream.

(Elisa Menuzzo)

The “house” of Tiramisù wanted by Elisa is truly spectacular: an ancient building located in Vicolo Barberia, from which it takes its name, a few steps from the central Piazza dei Signori, which was brought back to its original splendor after 3 years of restoration, during which, surprisingly, precious frescoes and coffered ceilings dating back to the 1400s emerged.

A discovery that changed the course of the design of the venue’s spaces in order to allow the visitor to enjoy the original decorations. Thus, cutting-edge solutions have been studied to conceal the sophisticated technological systems, including a high-tech panoramic glass elevator, designed to go from one floor to another, capturing all the wonder of the valuable details, from the frescoes to the original marble staircase which was completely moved and then relocated “around” the lift shaft.

On the ground floor we find the bar, the pastry shop, the deli store and the convenient cake away service which allows you to enjoy the desserts on the go thanks to practical take-away packaging.

Barberia restaurant is located on the first floor and offers Venetian recipes revisited by the resident chefs who work together with the best producers of the territory and hence characterized by the best and highly selected local ingredients which can also be bought in the shop.

Classic dishes, therefore, innovated in the cooking procedures and in the choice of raw materials, such as corn popcorn combined with cod instead of the classic polenta, pasta with smoked salmon, mascarpone cream and egg yolk, and fillet of beef sautéed in a pan and served with red wine reduction and stewed Treviso radicchio.

And, of course, you can order an amazing tiramisù. And if the best tiramisù is always the one made at home by our grandmas, Elisa has enlisted a true expert to make the best possible one. Lovely Mrs. Elsa supports the kitchen team in preparing the traditional recipe for this dessert and in searching for the best ingredients, happy to be able to pass on her secrets “on request”.

The Secret

The combination of innovation and tradition that distinguishes Palazzina Berberia is also found in the different forms in which its tiramisu can be tasted. In addition to the traditional slices, you can, in fact, also buy them in convenient single-portion jars, and in “vantiera”; term of the local dialect which defines the characteristic tray in which our grandmothers made tiramisu, strictly with two layers of ladyfingers soaked in coffee, two of mascarpone cheese cream and a final filling of dark cocoa powder.
