In Salgareda along the Piave River, a restaurant point of reference for all fish connoisseurs, with elegant interiors that blend with the surrounding nature, among materials inspired by fishermen's houses, touches of refined design and the savoir-faire of its owner and muse Roberta Rorato.

When you arrive, along the banks of the Piave River, in Salgareda, a town in the Venetian countryside narrated by great writers such as Giovanni Comisso and Goffredo Parise, the Marcandole restaurant strikes you with the beauty of its interior design, the young and smiling team and a fish proposal which has earned it awards and recognition throughout Italy.

A refined and cosmopolitan allure that makes it difficult to guess that Le Marcandole was born as a small village inn way back in 1931, elevated over time to a bastion of haute cuisine by its muse and landlady, Roberta Rorato, who has managed the restaurant since 1992.

The 60 years of history and tradition are, in fact, revealed to a careful eye in the characteristics that have made its hospitality famous, such as the exceptional quality of the raw materials that come from a thirty-year relationship with fishermen and small producers in the area, the flowers always fresh, whose scents and colors follow the rhythms of the seasons, and the elegant style details, such as the works of art by local artists and the refined silverware that recall a taste of home.

In the kitchen we find chef Waldemarro Leonetti who, with various “starred” experiences to his credit, is Roberta’s perfect “partner in crime” in giving life to a vision of a fine and light cuisine that aims to bring out the best of excellent ingredients without ever being banal, respecting what the sea, the river and nature give according to the season.

The menu speaks for itself and it is really difficult to choose between the legendary Marcandole raw fish plateaux, the more traditional dishes prepared with the freshest fish – from spider crabs to scallops which comes from the nearby fish markets – and its more creative signature dishes, such as the Cream of potatoes with roasted scallops and Marsala reduction, the Scampi alla Carbonara with bacon foam, or the Grilled turbot, lemon potato, lettuce heart and arrabiata sauce.

In combination, sommelier Massimiliano Mannozzi will be able to recommend the best champagnes, classic methods, local bubbles and a selection of important wineries from major international wine-growing regions, from France to Lebanon.

The beauty of the interiors is due to another partnership sought by Roberta: the one with Visual Display which completed the renovation of the premises in 2024. Together, they have created very “warm” spaces that combine natural shades with materials inspired to the surrounding landscape, such as the stone floor, the handcrafted terracotta tiles or the mat-covered ceiling which recalls the architecture of the fishermen’s huts typical of the Venetian lagoon.

In summer it is wonderful to book in the beautiful and flowery bioclimatic pergola, while in winter you can choose to dine near one of the always lit fireplaces or at the chef table located in front of the enormous open kitchen.

Roberta’s smile and care ensure that everything is always perfect, from the mise en place to the service. On the other hand, Le Marcandole is not just a restaurant: it is a “home” for many inhabitants of the area, a “museum” of food and wine traditions, one of the most requested catering services, as well as one of those rare bastions of elegance and good manners that are so difficult to find today.

The Secret

The name Marcandole refers to a small fish that rises from the sea along the rivers. Going the opposite route, in 2016 Roberta Rorato together with her husband Roberto Bardella inaugurated the Marcandole al Mare restaurant in Jesolo on the suggestive lighthouse beach. To find his proverbial hospitality and “freshness” also pieds dans l’eau.
