Il Bistrot Conegliano (TV)
In the heart of medieval Conegliano, a refined bistro which, thanks to the synergy with the nearby Hotel Canon d'Oro, once the ancient pawnshop of the city, carries on a centenary tradition of gastronomy and hospitality.
Opened in November 2022, the new bistro was born from the union of two consolidated Conegliano hospitality traditions: the historic Osteria di Collalbrigo, located in the homonymous village a few kilometers from the center and managed by Luca Dal Col, a long-experienced chef, and Cesare Bercini, restaurant manager, and the Hotel Canon d’Oro of the Capraro family.
Located in via XX Settembre in Conegliano, the restaurant is right next to the hotel, in a medieval context between two splendidly frescoed buildings that date back to the 16th century, devoted since the early 1900s to hospitality, first as a tavern and then as an inn. It is precisely to carry on this important tradition that Luca and Cesare accepted Federico Capraro’s invitation to take over the management of the spaces adjacent to the Hotel in order to create an activity that could become a new point of reference in the city.
We wanted to replicate in the center of Conegliano what Osteria di Collalbrigo already represents for the area: a place where you can feel at home all day long, perfect both for a quick break and for an important occasion.

A binomial, the one between the local and the territory, which is also evident from the name chosen, Il Bistrot di Conegliano, which, in its simplicity, indicates the desire to be the informal “home” of both those who live in the city and those who pass by for work or vacation.
Inside there are many tributes to Conegliano: from the menus with illustrations created by the La Malafede Tatto studio, to the contemporary art paintings loaned by a local collector, up to the many suppliers in the area, such as the renowned Panificio Brun which specially bakes the bread for the Bistrot, or, not far away, the Fiorin Silvia farm which supplies vegetables grown in biodynamics and very special aromatic herbs.
And if the roots of the Bistrot’s soul are certainly well rooted in the Conegliano area, there are many international contaminations that enrich it: from references to France in the furnishings to recipes that draw from various countries, especially from the East.
In fact, in the kitchen we find a young brigade with international experience in haute cuisine: Carlo da Broi, chef, Sebastiano Bracchi, sous chef, and Marco Bortolin, commis de cuisine, who create a menu that changes often according to the season, able to satisfy every need of the guests.
From gourmand cicchetti (tapas) such as the Tris del Bistrot with seared octopus pretzel, fried mini pizza with Patanegra lard and tuna ceviche with mango and coconut milk, to the great classics such as homemade tagliolini pasta with red prawn tartare, capers and almond sauce, up to mouth-watering main courses such as pigeon supreme with foie gras, sautéed beets, apple puree, hazelnuts, truffle and black wine and Port reduction, to the most traditional beef cuts, tartare and catch of the day dishes.
Great attention is paid to wine, as evidenced by the original bottle rack which, like a library, occupies an entire wall of the main room. Over 200 references, ranging from Veneto to France and all over the world. On the other hand, Conegliano is famous for its long winemaking tradition and is home to the first Enological School in Italy founded in 1876.
Perfect host, Cesare takes care of welcoming his guests and making them sit down, in the summer, in the magical flowery dehors pampered by an amuse bouche made with tomato gazpacho, strawberries and Prosecco, and, in winter, in the internal room welcomed by whipped alpine butter and a good glass of red wine.
It is no coincidence that, as if it had always been open, Il Bistrot Conegliano has already become simply “al bistrot” for everyone.
The Secret
The Bistrot of Conegliano is located next to the ancient Monte di Pietà (pawnshop) created by the Confraternita dei Battuti in 1524. The frescoes on the façade, with little angels holding up the instruments of the Passion and the image of the Pietà in the centre, appear to be the work of Ludovico Fiumicelli, a follower of Titian, an important painter of the time.
