Feva (TV)
In Castelfranco Veneto, located in a former 17th-century convent, Feva is the jewel of the Michelin-starred Chef Nicola Dinato and of the master of "de l'art de l’hospitalité" Elodie Dubuisson, who here have made their gourmet dream come true.
Located in an ancient area of the town named Borgo Treviso, just along the street leading to its medieval walls, Feva immediately reveals a double soul made up of refined contaminations and contrasts. The splendid barchessa that houses the restaurant was love at first sight for Nicola and Elodie. Here, in fact, after their many international travels and experiences, and a Michelin star gained in 2014, the couple “found home” by creating their personal and professional culinary den in Castelfranco Veneto, the perfect crossroads between Treviso, Vicenza and Padua.
The curious name “Feva” was inspired by a common episode in the life of Nicola and Elodie. It was once common to use a “nickname” to identify the different families. It seems that an ancient relative of the Dinato family got married to a woman with the surname “Feva”, thus passing this nickname down to future generations. The same happened in Elodie’s family, as the Dubuissons are in fact still known today also with the name “Tibault”.
We care about biodiversity in all its forms. We respect the rhythms of Nature and follow the seasons to be constantly inspired in the creation of our recipes.
(Nicola Dinato, Chef)
Feva tells an original story, which enhances tradition by looking at the contemporary with a cheerful spirit. Intimate and welcoming, the restaurant reveals a modern and minimal interior design that contrasts nicely with the historic structure of the building. There are two rooms, one on the ground floor which houses the beautiful wooden chef table, handcrafted recovering old Croatian oak woods, and one on the upper floor with tables of great atmosphere surrounded by the ancient windows of the convent and the original beams on the ceiling.
The design of the furnishings and the mise en place are handled directly by Nicola and Elodie, who have carefully chosen each object to tell a story. In addition to the beautiful contemporary artistic ceramics by Rina Menardi, various “ad hoc” objects have been created to accommodate Nicola’s recipes, such as the surprising blown glass works by Simone Crestani, a pupil of glass master Massimo Lunardon. Alongside, we find traditional objects, such as the Piave stone cutlery trays and the precious Limoges porcelain, made near the birthplace of Elodie.
Nicola Dinato’s cuisine starts from seasonality and excellent raw materials to elevate itself with original cooking techniques and delicious combinations that tickle all the senses. Both bread and pasta are homemade by using five different varieties of ancient grains. Among the signature dishes, we find the fabulous paccheri alla carbonara di canestrelli, sea urchin pesto and herbs, the original “row” braised meat or the “fried air”, and the Tiramigiù, which reinterprets the classic dessert Tiramisù. You can choose between two tasting menus: Anima, dedicated to the essence of cooking, which includes 8 courses, and Decade, 10 or 5 courses to choose from, which explores traditional dishes through the seasons.
The rich wine list boasts about 600 labels including a wide choice of the best French wines, personally selected by Elodie. During the summer, it is possible to book a table in the outdoor déhor overlooking the kitchen. Before or after dinner, for a romantic aperitif or a moonlight walk, in a few minutes you can reach the medieval walls that enclose the town of Castelfranco Veneto with its beautiful ancient Civic Tower, the Castle, perfectly preserved, and Giorgione House Museum.
The Secret
Adjacent to the building that houses Feva, there is a magnificent park of centuries-old trees, often used for summer dinners and events. In a corner of the park, there is a “secret garden” where the brigade grows different varieties of aromatic plants and vegetables used to enrich the recipes with fresh and sustainably grown seasonal first fruits.
