A family story and respect for the land

The revolution at Cantina Pizzolato began when Settimo Pizzolato joined his father Gino and chose a bold path: organic winemaking. In 1991, the year certification bodies were founded in Italy, the company obtained official certification, becoming a pioneer of a movement that goes “beyond” organic, pursuing every choice, even the smallest, to benefit the planet.

Today, with four family members working in the company, Pizzolato is a Benefit Corporation and boasts Equalitas certification, demonstrating a commitment that goes beyond the product, embracing social and economic sustainability in every aspect.

Beech Architecture: Beauty That Changes with Nature

The winery, inaugurated in 2016 and designed by Made Associati, is a masterpiece of green architecture.

Fully clad in PEFC-certified beech wood planks from the nearby Cansiglio forest, it is designed to blend in with the landscape. Treated exclusively with natural products, the wood changes color with the passing of the seasons, making the building a living organism.

Production: A Vegan Soul and the Cult of Raboso

Pizzolato is a certified vegan winery. During the wine clarification process, traditional isinglass or albumin is replaced with bentonite, a natural mineral, ensuring a 100% animal-friendly product.

Within the walls of the evocative underground barrel cellar, where the Metodo Classico bottles rest, the star of the area stands out: Raboso. Described by Pliny the Elder as a wine “blacker than pitch,” Raboso is the “vin da viajo” (travel wine) of the Serenissima, beloved for its proverbial endurance. A “rabid” variety with acidity and character, Pizzolato has transformed it into a refined, aging wine: Malanotte DOCG “Il Barbarossa”.

In addition, Cantina Pizzolato produces a wide range of organic and vegan wines, from the iconic Prosecco DOC bubbles to reds, including innovative sulfite-free lines, wines made from resistant grape varieties (PIWI), and alcohol-free options.

M-Use & Mini: The Most Beautiful Miniatures of All

Iconic and sparkling, the M-Use line is much more than a designer bottle, a “muse” with a faceted surface that reflects light like a jewel and, once drunk, can transform into a flower vase, an air freshener, or a lamp. A true must-have for the most glamorous parties are the M-Use Minis, designed to be enjoyed with sustainable glass straws.

L’Officina del Vino

Located next to the winery, L’Officina del Vino, opened in 2021, is the heart of the hospitality: a structure that “embraces” the surrounding centuries-old cherry trees, where you can enjoy authentic wines in a designer atmosphere.

It features a beautiful outdoor terrace overlooking the vineyards, a dining room with a kitchen decorated like a traditional Venetian rustic tavern, a panoramic terrace, and a secret room connected by a scenic atrium filled with bottles, perfect for private dinners or tastings.

Experiences: from Organic Tours to Picnics among the Vineyards

Cantina Pizzolato is more than just a winery; it’s a lifestyle destination offering a variety of experiences.

Picnic Experience: Imagine a golden afternoon, a blanket spread out on the grass, and a picnic basket filled with local flavors. The experience includes an educational walk through the organic vineyards, a tour of the winery, and a picnic among the vines, complete with a bottle of wine and seasonal snacks (vegan options available upon request).

Tastings: the “Bio Tours” (Selection, Prestige, or Sparkling) guide you through the barrel cellar and winemaking processes, culminating in tastings of Cantina Pizzolato wines, such as Manzoni Bianco or wines made from resistant grape varieties (PIWI), with a choice of venues on the winery’s patio or the outdoor terrace of the Officina del Vino. Tastings are paired with a platter of organic cheeses from local suppliers, artisanal cured meats produced by Settimo Pizzolato on its estates, and vegan options upon request.

By reservation, any type of private event can be organized in the winery’s spaces, from dinners and cooking classes to garden parties.

The Secret

Looking at the Officina del Vino, you’ll notice the walls curve in unusual ways, almost as if the building were “stepping aside.” The secret is that the Pizzolato family imposed an absolute constraint on the architects: not a single one of the centuries-old cherry trees on the land could be cut down. The building was therefore literally designed around the trees, creating a structure that embraces them.
